Sous Chef Simon Salt wins North West Fine Foods Young Chef of the Year award
Simon collected the award from TV Chefs Brian Mellor and Andrew Nutter at the event held at the Duncanhalgh Hotel in Clayton-le-Moors.
Having won the November regional heat organised by Blackpool & Lancashire Tourist Board, Simon needed to impress a panel of esteemed judges in the final with a three-course menu making use of fine local produce.
For his winning menu, Simon prepared Bob Leagram’s organic cheese with shallots and walnut dressing followed by corn fed Goosnargh duck breast with comfit of potato and carrot and orange puree. Ann Forshaw’s yoghurt mousse with spiced red wine figs was the successful desert.
